Launching as part of our DIA DE LOS MUERTOS (DAY OF THE DEAD) celebration, this month features a collection of mind-boggling illustrative work created by the exceptionally talented Sophia Pistofidou.
Come and check out Sophia's Day of the Dead tequila shrine mural, grab an Espolon Tequila cocktail and pay your respects to the dead!
Sophia is an illustrator and graphic designer from Athens, Greece, currently residing in London, UK.
The imagery she creates is based around an Absurdist perception of the weak line between truth and illusion. In her personal work she attempts to create illustrations that metaphorically interfere with the reality of human nature on an individual and societal level, to project a subjective truth.
Nature, architecture and personal observation are a big influence on her work, whilst maintaining an unbiased stance in her visual, social critique.

Sebastian Russell's pop-up 'vinyl only' shop at Stage 3 is a lazy Sunday of musical delights for your ears and culinary treats for your belly.
Le Shop showcases and promotes independent electronic music record labels, DJs and live acts. It is a great networking place to meet label owners, electronic music producers, DJs and of course buy their latest releases on vinyl.

Our first annual tequila/ mezcal festival took place from 31st October to November 2nd to co-incide with the Mexican Day of the Dead celebrations.
The event featured a selection of top quality tequila and mezcal brands, Day of the Dead inspired tequila experiences (including a very scary 'complete darkness' Paloma Bar hidden in the depths of Stage 3's basement and Espolon Tequila cocktails at the mezzanine tequila shrine bar), pico de gallo picklebacks, slasher slushies, a Day of the Dead inspired art show courtesy of Sophia Pistofidou, a DJ set by Mezcal Jackson (our very own mezcal drinking Day of the Dead Michael Jackson) and food offerings (La Ofrenda) in the way of Indonesian Tacos (Ayam Legend) and Japanese Tacos (Tacochu)...
A great way to kick off HOUSE OF AGAVE, our new tequila/ mezcal project.

WHITE MEN CAN'T JERK X RUDY'S RARE RECORDS
24th- 27th September saw our favourite jerk buddies cook up an extra special treat lined up for Lenny Henry's show Rudy's Rare Records at Hackney Empire.
Giant Jerk Burgers, Boom Boxes and Wing Tings all washed down nicely with a range of Appelton Rum Rudy's Rare Cocktails.
An Indonesian Pop-up Market...in London!
Sunday 21st September saw the first of a series of exotic monthly pop-up events brought to you by PERIUK- an Indonesian community based organisation and Platterform's very own AYAM LEGEND Indonesian Soul Food Kitchen.
Pasar Kaget gives you a real taste of the hustle and bustle of Indonesian market life with a huge variety of the best Indonesian street food London has to offer, a bar stocked with Indonesian beer, coffee, cocktails and other beverages, stalls selling batik & ikat designs and speciality Indonesian deli produce.
PERIUK and Lila Bhawa Indonesian Dance UK also provided us with an action packed line up of captivating traditional dance performances from various region of the great archipelago- AMAZING!!
Pasar Kaget literally means 'Surprise Market' and a surprise it sure was!! Can't wait for the next one...

TACOCHU x TAMPOPO
Tampopo (1985) is a celebration of life, love and gastronomy told through charming, funny and (at times) heartbreaking episodes related to food. The film is populated with a formidable cast – you'll meet a determined widow attempting to resurrect her failing ramen business and the cowboy trucker who trains her up, a bad-ass gangster couple with an erotic egg yolk fetish, and a choir homeless foodies with discerning taste for fine wine. For the dinner menu we took inspiration from the countless dishes that appear in the film, including, of course, Tampopo's own "Spring Onion Special" ramen.'
'Since October 2013 Tacochu have hosted regular supper clubs in intimate venues around East London. My cooking style is influenced by my Japanese and French parents who are both great home cooks. From them, I inherited my love for simple, honest cooking paired with good company. The menu varies every time based on seasonal themes, but it’s always based on Japanese comfort food, with my own twist on each dish.'

Our good friend Byron (Off Broadway/ Duke's Brew & Cue) will be opening his spanking new restaurant- THE POND at the end of the month where we had the pleasure of sampling some of head chef Frog Wong's innovative and bold flavour combinations ahead of their opening!
The Pond is inspired by the phrase ‘from across the pond' where Byron is set on exporting untapped flavours currently in vogue in North America to London. To this end, Pond Dalston will be the first New Hawaiian Cuisine (NHC) establishment in the capital.
The exploitation of the treasure trove of endemic flavors, twinned with the rich Asian cooking styles familiar to modern inhabitants of Hawaii has marked the emergence of New Hawaiian cuisine. This style of food is typified by robust, bold and exciting flavor, and innovation.
Providing a South Pacific inspired rock 'n' roll soundtrack for the proceedings we had Liam Casey of Hackney Central's favourite drop out centre, Pacific Social Club manning the turn tables. Featuring the best and worst in international pop gems, primitive rhythms, raw rock'n'roll, sweat soaked soul, cosmic implosions, psychedelic ramblings and jaded theatrics! Check out Liam's mix here.
We also developed some unique cocktails for the night including experimental picklebacks and other weird and wonderful exotic concoctions- no Tiki, no pineapples allowed! This is New Hawaiian Cuisine.

A night of Biker Beats and Northern Soul Food!
Local boys, Black Skulls (of Wilton Way) welcome us to the neighbourhood with their roaring motorbikes and a roaring DJ set.
Food on the night was fittingly provided by Skully- Yotam Ottolenghi's main development chef. Skully is currently busy working on recipes for Yotam's new cook book, but has kindly taken the time to join us for the night.
Skully's Northern Soul Food includes twists on diner classics, including baby back ribs with kimchi, Mogo Mogo brisket meatballs in banana batter and polenta jenga chips with blue cheese.

Popping up at Rockwell House rooftop, we headed over to the heart of Shoreditch for a special Ibiza summer season opening party weekender...
The experience hosted by Brugal rum came complete with a bohemian cocktail bar run by Hire the Barman, Ibizan style day beds and market stalls, relaxed beats and stunning views across East London.
We provided White Isle inspired street-food throughout from Gambas a la Plancha to Cho-Chos (chorizo cholla rolls) all with a healthy dose of Brugal rum as the basis for our recipes.
To celebrate the beginning of our exciting new residency at Hackney Empire's Café Bar we temporarily transformed the space into a pop-up juke joint- JukeBox serving up blues inspired Soul Food and Southern style cocktails in conjunction with Hackney Empire’s mighty Blues in the Night production.
Musical entertainment was provided by local boy Kev Wright and his Monkey Stomp Blues dropping a mix of Delta Blues classics, stompin’ Soul, swingin’ Jazz and jivin’ R&B that got the whole place rocking.

AROUND THE WORLD IN 81 DAYS
Paying homage to the Age of Discovery we set sail from the Hothouse in London Fields on our 'Sea Adventure Series’...
Embarking on our own Phileas Fogg inspired epic journey- ‘Around the World in 81 Days’ our mission was to circumnavigate the globe on a quest to discover some of the best seafood delights the world has to offer.
Platterform’s navigation team meticulously mapped out an alternative route across the world’s waterways, inviting the culinary skills and creativity of different chefs on board at each destination they set anchor.
Stowaway drinkers enjoyed rum rations, cask ales and sea shanty in the Barrel Hold whilst a treasure trove of nautical cocktails, line caught beers and games awaited diners in the Captain’s Bar.
Platterform's Sea Adventure Series ran from 23rd January - 13th April 2014 at the Hothouse.

As part of their Sea Adventure Series, Platterform welcomed all aboard to discover the Captain’s Bar and it's treasure trove of alcoholic concoctions, games and the occasional weather beaten Sea Dog wishing to share a tall tale or two.
Here you could pit your wits against other passengers or help judge the Captain's Cocktail Quest which saw some of the most notorious figures of oceanic world battle each other in a revival of an old Cornish Pirate tradition.
No one knows the exact origin of the Quest but references can be traced back centuries to large and sophisticated smuggling communities based in Cornwall. Following strict guidelines, entries for the Quest underwent rigorous tests of bravery and endurance where they spent the last year scouring the Seven Seas in search of plunder and their desired ingredients. Returning with their discoveries and spoils they presented their inspired cocktail creations for judgement.

Hands down the most popular drink over the 81 days and considering it is a summer style cocktail that we served on a roof through Jan, Feb, Mar reckon that it might have to reappear at some point in the summer.

After many weeks of gastronomic discovery and adventure across the seven seas, Platterform set sail on their journey home...
For the final chapter of their epic Sea Adventure Series, the crew navigate their ship up the Essex coast and moor it in a tidal estuary where they are welcomed home by good old friends- The Foragers.
Like the people who once scraped a living fishing the North sea and hunting and foraging for food on the wetland edges of England, The Foragers welcome home menu combines the best of Britain’s land and sea- a true taste of home!

Part 4 of Platterform’s Sea Adventure Series takes the culinary crusaders full steam across the Indian Ocean to the beautiful islands of the Seychelles where they meet a heady mix of Indian, Oriental and Creole cultures brimming with lots of exciting flavours.
With most of its islands outside of the cyclone belt, it is almost as if the Seychelles were designed deliberately for all types of fishermen, offering year round fishing in over 1.4 million km² of some of the richest fishing grounds on the planet…
Handing over the catch of the day to the kitchen team, Platterform are delighted to have on board Vinn Goute Seychelles Kitchen who will take command of the galley to prepare a tropical seafood treat including two of the Seychelles most prized fish- the Bourgeois Red Snapper and the King Fish.
To complete their offering, signatures such as the Vinn Goute curried goat, Piman For chilli sauce, papaya & carrot chutney and a generous portion of saffron rice are added to the mix for a dinner bursting with flavour and spices.
Vinn Goute (Come and Taste in Kreol) have been taking London’s street food scene by storm, featuring regularly at KERB and Street Feast and winning the praise of major news publications and food writers, including the Huffington Post who voted them Best Street Food in London last summer!

For part 3 of our Sea Adventure Series our gastronomic discovery voyage takes us to the tropical climes of the great Indonesian Archipelago.
Discover the delights of a wide variety of exotic dishes representative of the multitude of Indonesia’s islands, each with their own distinctive combination of regional ingredients, styles of cooking and cultural heritage.
Presented as a mighty sharing platter (13 courses) TOKO signature dishes include Udang Pepes (Javanese fragrant prawns steamed in banana leaf) and Cumi Cumi Bakar (BBQ baby squid) as well as meat options including authentic classics such as Rendang (Padang style slow braised beef in coconut sauce) and Sate Babi (Balinese style pork satay).
TOKO will be launching a full-time establishment in London later in 2014.
For part 2 of our Sea Adventure Series we invite chef Dave Yorkston on board to showcase his unparalleled artisanal smoking techniques and deliver a 4 course seafood dinner...
Hot and cold smoking techniques are utilised for the Yorkston Smoke House menu as well as pickling and curing- all customary food preparation techniques amongst both seafarers and colonials alike.
Look out for our very own custom-built cold smoking device installed on deck.

Relocating to the Hothouse in Hackney we decided to build a vast rooftop lodge retreat for the return of our epic winter event...
With a new found home above the treetops of London Fields our inspiration took us to the wild Pacific North West- home of the lumberjacks.
In true ceremonious style, our Thanksgiving launch date (nice timing) saw hungry plaid wearing locals join an orchestrated Turkey Chase across London Fields before heading up to the Lumberjack Diner for maple baby back ribs, sloppy Joe sliders, jerk turkey waffles and stacks of pancakes.
In the 4 weeks run up to Christmas we also discovered that our new neighbours were also partial to a sport of nail banging, musical logs and other quirky lumberjack activities. Exceptionally fun whilst sipping on a gingerbread hot toddy and in the company of a real life Sasquatch.

Platterform proudly picked up the Young British Foodie ‘Best Food Experience’ award in early 2012 and followed with a series of successful summer pop-ups at the architecturally award winning rooftop venue in SE1- The Skyroom.
2012 saw collaborations with the likes of Bonnie Gull Seafood Shack to create a classic British seaside experience called Bonnie-On-Sky; Alejandro Bello (of Ceviche) to celebrate the Olympic summer with the London Picnic Club and culminating with the SkyMarket where Platterform worked with a vibrant collective of locavore chefs and food producers to transform the Skyroom into a buzzing rooftop market.
With a desire to broaden their scope as collaborators and continue evolving as a business, Platterform kicked off 2013 by sending out an open invitation to the wider London foodie scene, offering a variety of chefs the opportunity to work closely with them to develop new food and drink concepts and become part of a lively programme of gastronomic events at their beautiful and intimate rooftop space.
A flexible yet confident approach to programming and managing their space allowed Platterform to establish a number of regular flagship events over the summer of 2013 from the hugely popular #WineWednesdays with A Grape Night In to the notorious brunch institution better known as The Hangover Club with The Good Egg.
The Skyroom also saw regularly packed out evenings with street food sensations such as Vinn Goute, Ayam Legend, Death by Burrito, Zoe’s Ghana Kitchen, Wiggies and Mumma Schnitzel and hosted an array of exclusive supper clubs with the likes of Master Chef winner Keri Moss, Chris Slaughter (head chef of Pig & Butcher), The Wandering Chef, Rachel Karasik, Ilyas Kassam and The Foragers.
The Skyroom quickly became recognised as one of London’s must go to foodie destinations, establishing Platterform as one of the trailblazers of London’s new food revolution.
